Root Beer Baked Beans

I'm still trying to escape the heat and use up the free 2-liter of root beer I received.  I managed to use another cup of it but I have a long way to go.






              

                           Root Beer Baked Beans


   3 cans       canellini beans, drained and rinsed
   6 slices      applewood smoked bacon, sliced into 1/2"
                        -- pieces, cooked
   1/4  cup     onion finely chopped
   2 large       garlic cloves, finely chopped
   1 cup         root beer
   2 tbsp        molasses
   4 tbsp        ketchup
   1/2 tsp       ground mustard
                    salt and freshly ground black pepper to taste

Cook bacon in a large frying pan.  Remove bacon and add in onions with
bacon grease.  When almost translucent, add in garlic and cook for another 2
minutes.  Remove garlic and onions and put into crockpot with other
ingredients.

Cook on medium high for 2 hours.

  1. Does this make for very sweet beans? I'd never think to add root beer to beans.

    1. The ground mustard cut the sweetness. Thankfully.
