Bacon & Corn Dish

I was looking for a somewhat easy vegetable to make tonight and really needed to create some space in my refrigerator.  The lucky winner was 5 ears of corn.  






Bacon & Corn Dish


4 slices of bacon, cut into small pieces
5 ears of corn, cut off of the cobs
1/4 cup cream
1 tsp parsley
salt & freshly ground pepper to taste




Cook the bacon in a large frying pan until crisp.  Remove and drain on a paper towel lined dish.  Remove all but 1 tbsp of bacon dripping from the pan.  Add in your corn.  Cook on medium heat for 5 minutes and add the bacon back in.  Pour cream in and parsley, salt and pepper.


Makes 2 servings 




That was so easy for dinner that I already have the dishes done and am ready to watch the opening ceremony of the Olympics.

  1. How nice. We just picked up a bunch of corn while in Niagara doing some wine tasting yesterday. Love the recipe and will be making this too!
