Peach Salad

98° and humid...I'm staying inside.  I went out and watered my plants but I think my squash aren't going to survive the heat and having no rain.  I made an easy salad (ok some might not consider this to be a salad but we do in the northern plains).

Peach Salad

8 oz Cool Whip
3 oz Peach Jell-O (you can use sugar-free)
2 cups cottage cheese
2 cup peaches, diced

Combine Jell-O with the Cool Whip in a large bowl.  Stir in cottage cheese and peaches.  Keep refrigerated until you're ready to eat. 

I used frozen peaches rather than fresh because they hold their shape and last longer.
