Pumpkin Waffles

 



Pumpkin season is still going strong here.  Today I made pumpkin waffles for brunch and served it with some Cinnamon Syrup that I had in the freezer.


Pumpkin Waffles

1/2 cup pumpkin
1 1/4 cup buttermilk
4 tbsp butter, melted
2 large eggs, separated
1/4 cup  brown sugar, packed
1 1/4 cups flour
1 1/2 tsp baking powder
1/2 tsp salt
1 tsp cinnamon
1/2 tsp ginger
1 dash nutmeg

Beat egg whites until stiff peaks form.  In a larger bowl, combine pumpkin, egg yolks, melted butter and buttermilk.  Add in egg whites.  Gradually add in dry ingredients.  Bake as per waffle manufacturers instructions.

Makes 8 waffles


Cinnamon Syrup

1 cup light corn syrup
2 cups sugar
1/2 cup water
1 tsp cinnamon
1 dash nutmeg
1 cup evaporated milk

In a large saucepan, mix together corn syrup, sugar, water and spices.  Bring to a boil for 3 minutes.  Remove from heat and let sit for 5 minutes.  Stir in evaporated milk.  Serve warm

Buckwheat Waffles

 




Buckwheat pancakes are my favorite pancake and bring back many happy family memories.  The other day, I was wondering if I could make a buckwheat waffle so I decided to try.  It worked and is delicious.


Buckwheat Waffles

1 cup buckwheat flour
1 1/2 tsp baking powder
1 tsp baking soda
1/4 tsp salt

1 tbsp sugar
1 large egg, separated
1/4 cup butter, melted and cooled

1 1/4 cup buttermilk

Sift all dry ingredients into a large bowl.  In a small bowl, beat egg whites until light and fluffy.  Gradually mix  buttermilk, egg yolk, and butter into dry ingredients.  Gently fold in the egg whites.

Bake per your waffle makers instructions.

Makes 5 waffles

Pancetta & Pear Waffles

There's a little taste of salt and a hint of pears in every bite of these waffles.  I chose pancetta over bacon because it's thinner and easier to crumble on top of the batter and bake into the waffles.  You can substitute apple or peach butter instead of the pears.  I happened to have pears on hand so that's what I went with.  I did not add any sugar when I cooked the pears since you already add in sugar in the waffle batter.



1 1/2 cups flour
1 tsp baking powder
1 tsp baking soda
1/8 tsp salt
3 tbsp sugar


2 large eggs, separated
3 tbsp pear butter (recipe below)
1 cup milk

3 oz pancetta, cooked, drained and crumbled

Sift all dry ingredients and zest into a large bowl.  In a small bowl, beat egg whites until light and fluffy.  Gradually mix milk, egg yolks, butter and pear butter.  Gently fold in beaten egg whites into dry ingredients.

Bake per your waffle makers instructions.

Makes 8 waffles

Pear Butter

4 pears, peeled, cored and cut into small pieces
1 tbsp. lemon juice
1/4 tsp cinnamon
1 dash nutmeg

Cook the pears and lemon juice medium heat until pears release their juices and are tender.  Remove from heat and blend until smooth.  Add in spices and allow to cool.  Refrigerate.

Dark Chocolate Waffles

This is a delicious way to pamper yourself on a weekend morning.  Dark chocolate, strawberries and whipped cream are a wonderful combination to serve for breakfast or as a dessert.




Dark Chocolate Waffles


1 1/2 cups flour
1 tsp baking powder
1 tsp baking soda
1/8 tsp salt
3 tbsp sugar
1/4 cup dark cocoa (I use King Arthur Flour Double-Dutch Dark Cocoa)
2 large eggs, separated
3 tbsp butter, melted and cooled
1/2 cup sour cream
1 cup milk


Sift all dry ingredients and zest into a large bowl.  In a small bowl, beat egg whites until light and fluffy.  Gradually mix milk, egg yolks, butter and sour cream.  Gently fold in beaten egg whites into dry ingredients.

Bake per your waffle makers instructions.

Makes 9 waffles

Blackberry Lemon Waffles

These waffles are so delicious that you do not need to add any syrup.  I recommend just a little powder sugar dusting or some whipped cream.  Blackberries and lemon compliment each other to make this a tasty breakfast, lunch or dinner.




Blackberry Lemon Waffles

1 1/2 cups flour
1 tsp baking powder
1 tsp baking soda
1/8 tsp salt

3 tbsp sugar
1 tbsp lemon zest
2 large eggs, separated
3 tbsp butter, melted and cooled
2 tbsp lemon juice

1/2 cup sour cream
3/4 cup milk
6 oz blackberries, rinsed, dried and cut into half or 3 pieces

Sift all dry ingredients and zest into a large bowl.  In a small bowl, beat egg whites until light and fluffy.  Gradually mix milk, egg yolks, butter, sour cream, lemon juice and beaten egg whites into dry ingredients.  Gently fold in blackberries.

Bake per your waffle makers instructions.

Blueberry Lemon Syrup

You can make your own pancake or waffle syrup in a half hour and it's so tasty and natural.  You can also use it to top ice cream later on in the day.  This syrup is guaranteed not to last long in your household.




Blueberry Lemon Syrup

2 1/2 cups blueberries, fresh or frozen
1 cup sugar
1 cup water
1/4 cup lemon juice (the juice from 1 lemon)
1 tsp lemon zest

1 tbsp cornstarch
1/4 cup water

Cook the blueberries, sugar, water, lemon zest and juice in a saucepan for 20 minutes over medium heat, bringing to a slow boil.  Strain the berries (lightly press down to make sure all of the juice is released) and return the juice to the pan.   Stir cornstarch into 1/4 cup of cold water and stir into the juice.  Keep on the heat, stirring frequently until it thickens.

Buttermilk waffles (makes 5)

1 cup flour
1 tbsp sugar
1 tsp baking powder
1/4 tsp sea salt
2 tbsp butter, melted
1 cup buttermilk
1 large egg
1/8 tsp cinnamon

Whisk the dry ingredients together.  Add in the butter, buttermilk and egg.  Let sit for 10 minutes before making waffles per your manufacturers instructions.

Apple Cider Waffles

They just don't make apple cider in small pint size containers.  When you buy a half gallon, you need to find all kinds of delicious ways to use it.  This is my second attempt at making waffles.  Last weeks were a bust.  So it was back into the kitchen to try again and this time with success.  The cinnamon syrup blended perfectly with these apple waffles.







                         Apple Cider Waffles

1 1/4  cups flour
2 tsp baking powder

2 tbsp sugar
1/2  tsp salt

1 tsp cinnamon
1 large egg, separated
1/2  cup milk
1/2  cup apple cider 

1/4 cup apple, shredded

Whisk all dry ingredients in a large bowl.  Add in milk, egg yolks, apple and
apple cider.  Beat egg whites until light and fluffy.  Gently fold
in egg whites.  Bake in waffle maker per manufacturers instructions.





                            Cinnamon Syrup

1 dash nutmeg

Bacon Waffles

What better way to start off the day than with the aroma of the ultimate comfort food ~ bacon.  It seemed like a good day to start off with a nice breakfast since there's been a break in the 90+ degree weather and high humidity outside.  A piece of bacon is in almost every bite and it adds that bit of saltiness that works well no matter if you want maple syrup or a berry one.  It works well with bit of apple butter as a topping too.  





Bacon Waffles

6 slices of bacon, cooked, drained and crumbled
1 1/2 cups flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt

2 tbsp sugar
2 large eggs, separated
3 tbsp butter, melted and cooled

1 1/2 cups buttermilk

Sift all dry ingredients into a large bowl.  In a small bowl, beat egg whites until light and fluffy.  Gradually mix buttermilk, egg yolks and butter into dry ingredients.  Gently fold in the egg whites.  Add in the bacon pieces.

Lemon Poppy Seed Waffles

What a better way to start off a morning (or even have them for dinner) than the tangy taste of lemon and the little crunch of poppy seeds when you take a bite.  Topped with a blueberry sauce and that makes it the perfect bite. 





Lemon Poppy Seed Waffles

1 1/2 cups flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt

2 tbsp sugar
1 tbsp lemon zest
2 large eggs, separated
3 tbsp butter, melted and cooled
2 tbsp lemon juice
1/2 cup Mascarpone

1 1/2 cups buttermilk

Sift all dry ingredients and zest into a large bowl.  In a small bowl, beat egg whites until light and fluffy.  Gradually mix buttermilk, egg yolks, butter, Mascarpone, lemon juice into dry ingredients.  Gently fold in the egg whites.

Cardamom Waffles

Torrential rains yesterday meant the thought of going outside seem very unappealing.  Time for a little plate of sunshine for brunch with fresh strawberry sauce and a crispy waffle.  





Cardamom Waffles

1 1/2 cups flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt

2 tbsp sugar
1 tsp vanilla
2 large eggs, separated
3 tbsp butter, melted and cooled

1/2 cup room temperature mascarpone or sour cream
1 1/44 cup milk

Sift all dry ingredients into a large bowl.  In a small bowl, beat egg whites until light and fluffy.  Gradually mix milk, egg yolks, butter, mascarpone and vanilla into dry ingredients.  Gently fold in the egg whites.

Makes 7 waffles

Orange Ricotta Waffles

I opted for waffles instead of pancakes to use with my cranberry syrup.  Maybe I just like the way the syrup pools in the little pockets or it could be that I didn't feel like my pancake flipping technique wasn't going to make pretty cakes this morning.  It turned out delicious so that's what matters, right?






Orange Ricotta Waffles

1 1/2 cups flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt

2 tbsp sugar
1 tsp orange zest
2 large eggs, separated
3 tbsp butter, melted and cooled
1/4 cup orange juice

1/2 cup ricotta
3/4 cup milk

Sift all dry ingredients and zest into a large bowl.  In a small bowl, beat egg whites until light and fluffy.  Gradually mix milk, egg yolks, butter, ricotta, orange juice into dry ingredients.  Gently fold in the egg whites.

Lemon Ricotta Waffles & Blackberry Syrup

Nothing like a rainy day to keep you indoors and making something that will brighten your day.  I made the blackberry syrup a few days ago and wanted something light and bright to serve it with.  I had already made lemon ricotta waffles so I just tweaked the recipe a slight bit and was ready to rock.






Lemon Ricotta Waffles

1 1/2 cups flour
1/4 cup sugar
3 tsp baking powder
1/4 tsp salt

1 tbsp lemon zest
2 large eggs, separated
4 tbsp butter, melted and cooled
2 tbsp lemon juice

1/2 cup ricotta
1 tsp vanilla
1/2 tsp lemon extract
1/2 cups buttermilk

Sift all dry ingredients and zest into a large bowl.  In a small bowl, beat egg whites until light and fluffy.  Gradually mix buttermilk, egg yolks, butter, ricotta, extracts and lemon juice into the dry ingredients.  Gently fold in the egg whites.

Bake per your waffle makers instructions.

Makes 10 waffles



Blackberry Syrup

10 oz blackberries, thawed if frozen and cooked down (this will be about 1/3 cup juice)
1/4 cup water
1 tbsp cornstarch
1/4 cup sugar

Cook down blackberries over a low heat in a small saucepan.  They will release their own juice if frozen.  If fresh, add in a couple tablespoons water. Allow to cool and then strain through a fine mesh.  Push down and get some of the pulp also.  Return to saucepan and add the water, cornstarch and sugar.  Stir in completely and then turn the heat on and bring to a simmer, stirring frequently until the syrup thickens.  Store syrup in an airtight container in your refrigerator.  The syrup will be good for a couple weeks.  You can also use it over ice cream.

Chicken & Waffles

And gravy, naturally.  This is an ideal brunch recipe since the chicken should marinate overnight in a bath of buttermilk and hot sauce.  Carrying on the flavor, I used buttermilk in the waffles and gravy.






Chicken & Waffles & Gravy

Chicken ~

3 chicken breasts
1/2 cup buttermilk
2 tbsp hot sauce

Place in a plastic bag that seals and allow to marinade overnight in the refrigerator

Coating for chicken ~

1 cup self rising flour
1 tsp salt
1/2 tsp freshly ground black pepper
1/2 tsp garlic powder

Heat large frying pan with 2 tbsp of extra virgin olive oil.  When heated, dip chicken in flour mixture and add to pan.  Cook until golden brown and inside temperature registers 165°.



Buttermilk Waffles ~

1 cup flour
1 tbsp sugar
2 tsp baking powder
1/2 tsp salt
1 large egg
1 cup room temperature buttermilk
2 tbsp butter, melted


Sift together dry ingredients.  In a large mixing cup or small bowl, combine the egg, buttermilk and butter.  Gradually stir in dry ingredients.  Bake in waffle maker per manufacturer's instructions.

Gravy ~

Remove chicken when cooked.  Add in ~

2 tbsp butter
2 tbsp flour
1/3 cup chicken broth
1/2 cup buttermilk
salt and freshly ground pepper to taste

Melt butter in frying pan with drippings.  Stir in flour and allow to cook for one minute.  Stir in chicken broth and whisk until flour is incorporated into broth.  Stir in the buttermilk and allow to thicken.  Season to taste.

Blackberry Waffles

Berry bursting flavor and aromas.  That's how my morning started.  Well, to be completely honest that was how it was after my daily 1/2 can of Coca-Cola was consumed and my eyes completely open.  Blackberries are on sale this week so I picked up a container with no plans for in mind.  Now with a container of blackberries and strawberries in my refrigerator it was time to make a decision on what to do and making a jam was very tempting but I'm glad that I chose to make these.  The berries bake into the waffle and add a little burst with every bite.








Blackberry Waffles

1 3/4 cups flour
2 1/4 tsp baking powder
2 tbsp sugar
3 tbsp butter, melted and slightly cooled
1/2 tea sea salt
3 large eggs, separated
1 1/4 cups milk
1/2 pint fresh blackberries, rinsed and quartered

Sift all dry ingredients into a large bowl.  In a small bowl, beat egg whites until light and fluffy.  Gradually mix milk, egg yolks, and butter into the dry ingredients.  Gentle fold in egg whites first and then the blackberries.

Makes 8 waffles.

Lemon Ricotta Waffles

I posted a blueberry sauce recipe the other day and these waffles are what I made to go with it.  The light lemon waffles and the blueberries with a hint of lemon are a perfect compliment to one another.







Lemon Ricotta Waffles

1 1/2 cups flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt

2 tbsp sugar
1 tbsp lemon zest
2 large eggs, separated
3 tbsp butter, melted and cooled
2 tbsp lemon juice

1/2 cup ricotta
1 cup milk

Sift all dry ingredients and zest into a large bowl.  In a small bowl, beat egg whites until light and fluffy.  Gradually mix milk, egg yolks, butter, ricotta, lemon juice and beaten egg whites into dry ingredients.

Cinnamon Waffles

Nothing like a little Sunday morning pampering with waffles for breakfast.  The aroma of the cinnamon when the maple syrup hits it is just heavenly.  








Cinnamon Waffles



1 cup flour
1 tsp baking powder
1/2 tsp salt
1 tsp cinnamon
2 large eggs, separated
3/4 cup milk
2 tbsp canola oil
1/2 tsp vanilla

Sift all dry ingredients into a large bowl. In a small bowl, beat egg whites until light and fluffy. Gradually mix milk, egg yolks, oil and beaten egg whites into dry ingredients.

Bake per your waffle makers instructions.

Makes 6 waffles.

Strawberry Waffles

Sunday mornings call for an extra special breakfast.  During the week my breakfast consists of cheese and ham so I can splurge and create a fun breakfast on the weekend.  Today I doubled up on the strawberries - inside and on top of my waffle.






Strawberry Waffles

1 egg yolk
2 egg whites
1 cup flour
1 tsp baking powder
pinch of salt
1/3 cup milk
1 tbsp honey
3 tbsp butter, melted
1/2 cup strawberry sauce


Here's the strawberry sauce recipe that I had made last month and froze ~


Strawberry Sauce

1 pound strawberries, quartered
1 tsp lemon juice
dash lemon zest
1/4 cup sugar, to start - add more depending on sweetness of berries




Sift all dry ingredients into a medium sized bowl. In a small bowl, beat egg whites until light and fluffy. Gradually mix milk, egg yolks, melted butter  and strawberry sauce into dry ingredients.  Gently fold in beaten egg whites.  Bake in waffle maker per manufacturers instructions.

Buttermilk Waffles with Strawberry Sauce

Happy New Year!  I hope everyone had a wonderful night whether it was out celebrating or sleeping.

I'm starting off the new year with two new recipes for brunch this morning.  I didn't want to waste a day off and I caught a glimpse at morning television and decided my day was better spent in the kitchen.





Buttermilk Waffles

2 cups flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon
2 large eggs, separated
2 cups buttermilk
4 tbsp butter, melted
1/2 tsp vanilla

Sift all dry ingredients into a large bowl. In a small bowl, beat egg whites until light and fluffy. Gradually mix buttermilk, egg yolks, melted butter  and beaten egg whites into dry ingredients.

Bake per your waffle makers instructions.

Makes 11


Strawberry Sauce

1 pound strawberries, quartered
1 tsp lemon juice
dash lemon zest
1/4 cup sugar, to start - add more depending on sweetness of berries

In a medium saucepan, cook strawberries, lemon juice and zest and 1/4 cup sugar until it starts to thicken.  Taste and adjust sugar amount accordingly.  Blend with a stick blender for a minute and allow to cool slightly before serving.

Caramel Applebutter Waffles

Nothing like a rainy morning to send me into the kitchen to create a sweet breakfast.




                         Caramel Applebutter Waffles

   1 3/4  cups flour
   2 1/4  tsp baking powder
   2 1/2  tsp sugar
   1/2  tsp salt
   3 large eggs, separated
   1 1/2  cups milk
   1/2  cup caramel applesauce


Whisk all dry ingredients in a large bowl.  Add in milk, egg yolks and
caramel apple butter.  Beat egg whites until light and fluffy.  Gently fold
in egg whites.  Bake in waffle maker per manufacturers instructions.



                          Caramel Apple Butter

3 lbs apples, peeled, cored and diced
1/4 cup water
1 tbsp lemon juice
1 1/2 cup sugar
1 tsp cinnamon
1/2 tsp ground cloves
1/4 tsp ginger
25 caramel candies (about 1 ounce)

Put chopped apples into a crockpot with water and lemon juice. Cook until apples are tender. Puree apples in a food mill or food processor.

Add sugar and bring to a low boil. Add spices. Add in caramels and stir well.



                            Cinnamon Syrup

1 cup light corn syrup
2 cups sugar
1/2 cup water
1 tsp cinnamon
1 dash nutmeg
1 cup evaporated milk

In a large saucepan, mix together corn syrup, sugar, water and spices. Bring to a boil for 3 minutes. Remove from heat and let sit for 5 minutes. Stir in evaporated milk. Serve warm

Strawberry Waffles

Another chilly morning which is hopefully going to end soon with a warming trend next week.





Strawberry Waffles

2 1/2 cups flour
3/4 tsp salt
4 tsp baking powder
1 1/2 tbsp sugar
2 large eggs, separated
2 cups buttermilk
2/3 cup canola oil
1/2 cup strawberries, chopped

Whisk all dry ingredients in a large bowl.  Add in buttermilk, oil and egg yolks.  Beat egg whites until light and fluffy.  Gently fold in egg whites.  Add in chopped strawberries and juice.  Bake in waffle maker per manufacturers instructions.


Serve with strawberry syrup and whipped cream for a special treat.
