It's a football weekend here in the valley. Congratulations Bison on your win today. What better snack to watch football or any other sporting event with than a cheese ball? Today's was a combination of 3 Italian cheeses.
Italian Cheese Ball
8 oz cream cheese, softened
1/4 cup Parmesan cheese, grated
1/4 cup Asiago cheese, grated
2 cups mozzarella, shredded
1/4 tsp garlic powder
1/2 tsp oregano
1 tbsp parsley
1/8 tsp red pepper flakes
1/3 cup cashews, chopped
Mix together softened cream cheese, Parmesan and mozzarella cheeses. Add in the garlic and spices. Shape into a ball shape in bowl and cover
with plastic wrap and refrigerate for 2 hours. Remove and roll in chopped
cashews.
Return to refrigerator. Remove 15 minutes before
serving. Serve with crackers or vegetables.

Sweet & Heat Cheese Ball
Kicking off the countdown to the Super Bowl and the first up is a cheese ball which is always a welcome treat. This one gets it's sweetness from dried cranberries and heat from green chilies.
Sweet & Heat Cheese Ball
8 oz cream cheese, softened
2 cups Monterey Jack cheese, shredded
1/2 cup Craisin's, chopped
2 tbsp green chilies
1/4 cup pecans, chopped
Mix together softened cream cheese and Monterey Jack cheese. Add in the chopped Craisin's and green chilies. Shape into a ball shape in bowl and cover
with plastic wrap and refrigerate for 2 hours. Remove and roll in chopped
pecans. Cover and return to refrigerator. Remove 15 minutes before
serving. Serve with crackers.

Raspberry Ale Cheese Ball
It's not often that I will mention a brand name of a product in my blog but I will when I find a new cheese that love. The cheese I found is Sartori Raspberry BellaVitano, a cheese that was soaked in raspberry ale. It shredded nicely and I didn't want to add in spices that would hide the flavor.
Raspberry Ale Cheese Ball
8 oz cream cheese, softened
5.3 oz Sartori Raspberry BellaVitano cheese, shredded
1 tbsp red raspberry seedless jam
1/3 cup cashews, chopped
Mix together softened cream cheese and Raspberry BellaVitano cheese. Add in the raspberry jam and mix well. Shape into a ball shape in bowl and cover
with plastic wrap and refrigerate for 2 hours. Remove and roll in chopped
cashews.
Return to refrigerator. Remove 15 minutes before
serving. Serve with crackers or vegetables.

It's a holiday weekend and time to gather with family and friends. Also, college football has started with the pros starting next week so it's time to entertain and how better than with an easy to make cheese ball.
Parmesan Cheese Ball
8 oz cream cheese, softened
1/2 cup Parmesan cheese, grated
2 cup mozzarella, shredded
1/4 tsp garlic powder
1/2 tsp oregano

Pepperoni Cheese Ball
I love cheese in all forms so combining two types of cheese together in something besides a grilled cheese sandwich (I actually opt for three cheeses in those) is a dairy nirvana for me. Adding in Italian flavors is just like icing on the cake...

8 oz cream cheese, softened
2 cups applewood smoked mozzarella, shredded
2 oz pepperoni, diced small
1/4 tsp garlic powder
1/2 tsp oregano
1/4 cup walnuts, chopped
Mix together softened cream cheese and mozzarella cheese. Add in the pepperoni, and spices. Shape into a ball shape in bowl and cover
with plastic wrap and refrigerate for 2 hours. Remove and roll in chopped
walnuts.
Return to refrigerator. Remove 15 minutes before
serving. Serve with crackers.

Bacon Cheeseball
My first delivery from my CSA arrives tomorrow and it contains lots of lettuce so I made this cheeseball to go along with my salads this week.
Bacon Cheeseball
1 8-ounce cream cheese, softened
2 cups marble jack cheese, shredded
1/4 tsp garlic powder
1/8 tsp cayenne
1/2 tsp paprika
4 slices bacon, cooked and crumbled
2 dashes hot sauce
1/2 cup peanuts, finely chopped
Mix together softened cream cheese and marble jack cheese. Add in all of
the spices, bacon and hot sauce. Shape into a ball shape in bowl and cover
with plastic wrap and refrigerate for 2 hours. Remove and roll in chopped
peanuts or pecans.
Return to refrigerator. Remove 15 minutes before
serving.

Whiskey Cheese Ball
Today is National Cheese Ball day so I'm sharing a recipe I created a couple weeks ago and shared with my co-workers to taste test ~
8 ounces cream cheese, softened
2 cups pepper jack cheese, shredded
1/2 tsp onion flakes
1/4 tsp cumin
1/4 tsp garlic powder
1/4 tsp cayenne pepper
1 tbsp Jack Daniels or your favorite whiskey
1/2 cup peanuts, finely chopped
1. Mix together softened cream cheese and shredded pepper jack cheese. Add in whiskey. Add in onion flakes and spices, mix well.
2. Roll into a ball in the same bowl that you used for mixing. Cover with plastic wrap. You can use the plastic wrap to help mold the cheese into a ball.
3. Refrigerate for 2 hours. Remove plastic wrap and roll into crushed peanuts.
4. Wrap and refrigerate until ready to use. Remove from refrigerator and let warm up 15 minutes before serving.
