Blueberry Lemon Syrup

You can make your own pancake or waffle syrup in a half hour and it's so tasty and natural.  You can also use it to top ice cream later on in the day.  This syrup is guaranteed not to last long in your household.




Blueberry Lemon Syrup

2 1/2 cups blueberries, fresh or frozen
1 cup sugar
1 cup water
1/4 cup lemon juice (the juice from 1 lemon)
1 tsp lemon zest

1 tbsp cornstarch
1/4 cup water

Cook the blueberries, sugar, water, lemon zest and juice in a saucepan for 20 minutes over medium heat, bringing to a slow boil.  Strain the berries (lightly press down to make sure all of the juice is released) and return the juice to the pan.   Stir cornstarch into 1/4 cup of cold water and stir into the juice.  Keep on the heat, stirring frequently until it thickens.

Buttermilk waffles (makes 5)

1 cup flour
1 tbsp sugar
1 tsp baking powder
1/4 tsp sea salt
2 tbsp butter, melted
1 cup buttermilk
1 large egg
1/8 tsp cinnamon

Whisk the dry ingredients together.  Add in the butter, buttermilk and egg.  Let sit for 10 minutes before making waffles per your manufacturers instructions.

Peach Prosecco Syrup

Happy Valentine's day ~  It's a little late for you to make this today but there's always next weekend.  Plus you can make some Peach Bellini's to serve with the pancakes or waffles.



Peach Prosecco Syrup

16 oz frozen peach slices
1 cup Prosecco
1/2 cup peach nectar
1/4 cup sugar

Place everything in a large saucepan and turn to medium heat until it starts to simmer.  In a small dish (or your measuring cup) mix together 1/4 cup peach nectar and 1 tbsp cornstarch.  Stir into the peaches and cook until it thickens.  Mix in 1/4 tsp cinnamon.

I made ricotta pancakes to use the syrup on.


Ricotta Pancakes

In a medium bowl, melt 1 tbsp butter in the microwave and cool.

Add in ~

2 large egg yolks (beat the whites in a separate bowl to add in later)
1/2 tsp vanilla
1/2 cup ricotta
1/2 cup milk

Mix together and then add in ~

1/2 cup flour
1/2 tsp baking powder
1/4 tsp salt
2 tsp sugar

Fold in the egg whites.  Let sit for 15 minutes.  Heat your griddle.  Melt a little butter on it before starting your pancakes.  When the pancakes are bubbling and turning golden on the first side, flip carefully and cook the second side.

Makes 6 pancakes

Apple Cider Waffles

They just don't make apple cider in small pint size containers.  When you buy a half gallon, you need to find all kinds of delicious ways to use it.  This is my second attempt at making waffles.  Last weeks were a bust.  So it was back into the kitchen to try again and this time with success.  The cinnamon syrup blended perfectly with these apple waffles.







                         Apple Cider Waffles

1 1/4  cups flour
2 tsp baking powder

2 tbsp sugar
1/2  tsp salt

1 tsp cinnamon
1 large egg, separated
1/2  cup milk
1/2  cup apple cider 

1/4 cup apple, shredded

Whisk all dry ingredients in a large bowl.  Add in milk, egg yolks, apple and
apple cider.  Beat egg whites until light and fluffy.  Gently fold
in egg whites.  Bake in waffle maker per manufacturers instructions.





                            Cinnamon Syrup

1 cup light corn syrup
2 cups sugar
1/2 cup water
1 tsp cinnamon
1 dash nutmeg
1 cup evaporated milk

In a large saucepan, mix together corn syrup, sugar, water and spices. Bring to a boil for 3 minutes. Remove from heat and let sit for 5 minutes. Stir in evaporated milk. Serve warm
.

Cranberry Syrup

I do enjoy cranberries in all forms.  I was tempted to use fresh cranberries to make this syrup but opted for a more traditional clear syrup this time for pancakes and waffles.  This is a wonderful start for your holiday breakfast plans.  I'm going to make orange ricotta pancakes to go with mine but a nice cinnamon pancake or waffle will also be pretty tasty.







Cranberry Syrup

2 cups cranberry juice
1 cup sugar
1/2 cup light corn syrup
1/2 tsp salt
2 tbsp cornstarch

Mix the cornstarch with 1/2 cup of the cranberry juice.  Add to the remainder of the juice, sugar, corn syrup and salt in a large saucepan.  Thicken over a low heat, stirring frequently.

Lemon Ricotta Waffles & Blackberry Syrup

Nothing like a rainy day to keep you indoors and making something that will brighten your day.  I made the blackberry syrup a few days ago and wanted something light and bright to serve it with.  I had already made lemon ricotta waffles so I just tweaked the recipe a slight bit and was ready to rock.






Lemon Ricotta Waffles

1 1/2 cups flour
1/4 cup sugar
3 tsp baking powder
1/4 tsp salt

1 tbsp lemon zest
2 large eggs, separated
4 tbsp butter, melted and cooled
2 tbsp lemon juice

1/2 cup ricotta
1 tsp vanilla
1/2 tsp lemon extract
1/2 cups buttermilk

Sift all dry ingredients and zest into a large bowl.  In a small bowl, beat egg whites until light and fluffy.  Gradually mix buttermilk, egg yolks, butter, ricotta, extracts and lemon juice into the dry ingredients.  Gently fold in the egg whites.

Bake per your waffle makers instructions.

Makes 10 waffles



Blackberry Syrup

10 oz blackberries, thawed if frozen and cooked down (this will be about 1/3 cup juice)
1/4 cup water
1 tbsp cornstarch
1/4 cup sugar

Cook down blackberries over a low heat in a small saucepan.  They will release their own juice if frozen.  If fresh, add in a couple tablespoons water. Allow to cool and then strain through a fine mesh.  Push down and get some of the pulp also.  Return to saucepan and add the water, cornstarch and sugar.  Stir in completely and then turn the heat on and bring to a simmer, stirring frequently until the syrup thickens.  Store syrup in an airtight container in your refrigerator.  The syrup will be good for a couple weeks.  You can also use it over ice cream.

Blackberry Italian Cream Soda

I have found my new summer drink.  I hope summer arrives since spring seems to be failing to bring warmth and sunshine.  This drink is light and refreshing.  And don't think that making a simple syrup is hard to do...it wouldn't have simple in it's name if it wasn't.








Blackberry Italian Cream Soda

1/4 cup blackberry simple syrup (recipe below)
sparkling water
ice
1 tbsp Half and Half


Blackberry Simple Syrup

1 cup sugar
1 cup water
1 cup blackberries (I used frozen since they release more juice)

Stir and combine the water and sugar.  Add in the blackberries and heat over medium heat until the berries release their juice.  Let cool down and strain out the berries.

In a tall glass, add in the blackberry syrup, ice and sparkling water.  Pour a splash of Half and Half on top.

Strawberry Syrup

I was having buckwheat pancakes with my family with some delicious maple syrup (the real stuff) and it reminded me that I hadn't come up with a new syrup recipe lately and that it was time to change that.







Strawberry Syrup

1 cup sugar
1/2 cup corn syrup
1 cup Strawberry Breeze juice
2 tbsp corn syrup
1/4 tsp salt

Whisk strawberry juice and cornstarch together in a large saucepan before you turn on the burner.  Once blended, whisk in sugar, salt and corn syrup.  Thicken over a low heat, stirring frequently.

Pear Syrup

I ran out of the delicious peach syrup I had made and already used maple syrup yesterday for my breakfast sweet potato so I guess it's time for a new syrup.  I had some pear juice on had so I made this topping for cinnamon waffles that I whipped up this morning.







Pear Syrup

1 cup sugar
1/2 cup light corn syrup
2 tbsp corn starch
1 cup pear juice
1/4 tsp salt
1/4 tsp cinnamon

Whisk the first five ingredients together in a large saucepan.  Bring to a light rolling boil, stirring occasionally until it starts to thicken.  Remove from the heat and whisk in the cinnamon.  Serve warm or cold.

Peach Syrup

There's a few items that are always in my home ~ fruit (usually berries), chocolate and peach nectar.  Since I like to pamper myself with a good Sunday morning breakfast, I made this on Saturday night so all I had to do was whip up a quick batch of waffles.  It was the perfect way to start the day.






Peach Syrup

1 cup sugar
1/2 cup light corn syrup
2 tbsp corn starch
1 cup peach nectar
1/4 tsp salt
1/4 tsp cinnamon

Whisk the first five ingredients together in a large saucepan.  Bring to a light rolling boil, stirring occasionally until it starts to thicken.  Remove from the heat and whisk in the cinnamon.  Serve warm or cold.

Cinnamon Apple Syrup

I continued the taste of fall into my breakfast this morning.  I've had a good weekend of freezing corn, canning homemade marinara sauce and caramel apple butter and making chili.  Unfortunately we had a hard freeze last night so my afternoon will be spent cleaning out and putting away planters and maybe making some grapevine wreaths.




Cinnamon Apple Syrup

2 cups unsweetened apple juice
2 tbsp cornstarch
1/2 tsp cinnamon
3 tbsp sugar

Whisk apple juice and cornstarch together in a large saucepan before you turn on the burner.  Once blended, whisk in sugar and cinnamon.  Thicken over a low heat, stirring frequently.
