Peach Pizza

Peach season is my favorite time of the year so creating recipes for it are always fun and tasty.  I had made a pizza last week and froze the 2nd dough ball for later use and decided to make a fruit pizza.  You can make a powdered sugar drizzle but I opted not too since it was already sweet enough.  The juices release enough while baking to give you a nice, crisp crust.



 
Peach Pizza
 
Pizza crust (makes 2) 

2 cups flour

1 tsp yeast
1/2 tsp honey
1/2 tsp salt
3/4 cup warm water
1/4 cup canola oil

Place the warm water, honey and yeast in a large measuring cup and let sit for 10 minutes Put the flour and salt in a food processor with the chopping blade.  Pulse until mixed.  Add in the yeast mixture and pulse again until it's all incorporated into the flour.  Switch to run and pour in canola oil and let the dough knead in the machine.  Remove dough and place on a lightly floured surface.  Knead for a couple minutes.  Cut in half (one half can be frozen for later use within a month).  Let dough sit for about 30 minutes.  This will give you time to get the rest of your ingredients ready.  Stretch out on a greased pizza pan.

3 peaches, peeled and sliced
¼ cup sugar
Mix peaches and sugar together and let sit for 10 minutes.  Place peaches on top of dough in a circular pattern.

Streusel
3 tbsp butter, melted
½ cup brown sugar
½ cup flour
1 tsp cinnamon

Combine together and sprinkle over top of the peaches.  Bake for 20 minutes at 350°.

Caramel Apple Pizza

A delicious pizza that will make your home smell like cinnamon and apples.  I was up early baking so it was breakfast too....when it's -18 outside, it is acceptable to have dessert for breakfast.  Plus, I had the extra thin crust pizza dough leftover from the pizza last night to use and apples in the refrigerator.





Caramel Apple Pizza


3 apples, peeled and sliced
1 tbsp lemon juice
2 tbsp brown sugar, I used dark
1/2 tsp cinnamon

Cook in a large saucepan until the apple slices are tender

Topping 

1/2 cup brown sugar, I used dark
1 tsp cinnamon
1/4 tsp salt
1 cup flour
1/2 cup butter, softened

Stir all the dry ingredients together.  Blend in the butter with a fork.

Roll out the dough and place on your pizza stone or pan.  I used my cast iron pan.  Spoon out the apples evenly on top of the dough, leave the excess juices behind so your crust isn't soggy.   Sprinkle the topping evenly over the apples  Bake for 15 minutes at 400°.  Allow to cool slightly and drizzle caramel ice cream topping on top of the topping.

Buttermilk Chicken & Bacon Pizza

The temperature never got above 0 and there was a championship football game playing...odds of getting a pizza delivered in a reasonable amount of time wasn't looking good.  Luckily the refrigerator and pantry had all the ingredients for this delicious thin crust pizza.  The crust recipe is enough for 2 pizzas....you'll see what I created with the other crust tomorrow.  





Buttermilk Chicken & Bacon Pizza

1 chicken breast, sliced thin and marinated for 4 hours in 1/2 cup buttermilk                                 and 1/2 tsp hot sauce
4 slices of bacon, cooked, drained and crumbled
6 sun-dried tomatoes, drained and sliced thin


Pizza Sauce ~ enough for 2 pizzas and freezable

1 - 6 oz tomato paste
6 oz water
3 tbsp Parmesan cheese
2 cloves garlic, minced
3 tbsp honey
1/4 tsp oregano
1/2 tsp Italian Seasonings
1/4 tsp freshly ground black pepper
1/8 tsp cayenne
1/8 tsp red pepper flakes
salt to taste

Mix together tomato paste and water in a medium sized pan.  Add in honey, garlic and spices and let simmer for 30 minutes, stirring occasionally.

Cook chicken slices just until done...do not overcook since you'll also be baking them.  Top dough with sauce (as much as is your preference).  Evenly place the chicken slices, bacon, tomato on top.  Top with your favorite cheese.  I used a shredded 5 Italian cheese blend.  Bake for 15 minutes at 375°.

Kentucky Hot Brown Pizza

I’ve been fascinated by this sandwich ever since I saw it on a Bobby Flay throw down.  Since I had made a small turkey breast and had some leftovers, I decided to incorporate it into a pizza instead of a sandwich.  There’s still the dough, it’s just spread out instead of stacked and it doesn’t take long to make it but you can buy a ready made dough too.

From now until Thanksgiving, I'm going to be making different recipes using Thanksgiving ingredients but in a non-traditional way.  My cranberries will not be in a sauce, sweet potatoes not covered with marshmallows...you get the idea.  This is how I'll be using leftover turkey because it's that good.
 


Kentucky Hot Brown Pizza

Toppings –
1 ½ cups turkey breast, cooked and diced
3 thick slices of bacon, cut into 1” pieces, cooked and drained
2 Roma tomatoes, peeled and diced
1 ½ cups Pizza cheese
1 tsp parsley

Dough –
1 tsp active dry yeast
1/2 tsp sugar
3/4 cup warm water

Mix sugar and yeast into the warm water and let sit for 10 minutes.


In a medium bowl, combine 2 cups flour and 1 1/2 tsp sea salt.  Slowly mix in water.  Mix together (using your hands works best) until it forms a ball.  Knead for a couple minutes on a lightly floured surface and return to the bowl and rub 1 tsp extra virgin olive oil on top.  Cover with a towel and let rest for about 45 minutes.
 
Sauce –
1 tbsp butter
1 tbsp flour
1 cup milk
1/3 cup Romano cheese
Salt and freshly ground pepper, to taste
Melt butter in a small saucepan.  Stir in flour and allow to cook for a minute.  Gradually stir in milk ¼ cup at a time, allowing to thicken after each time.  Remove from heat and stir in cheese and spices.
 
Spread out the dough to your desired shape.  Spread the sauce on top.  Sprinkle the turkey, tomato and bacon pieces over the sauce.  Top with the pizza cheese and then sprinkle the parsley on top.  Bake at 350 for 20 minutes or until golden brown.

Meatball Pizza

I had a pound of extra ground beef that needed a home.  What better than resting on top of a pizza?  Little meatballs nestled in cheese and sauce.  The red pepper slices are a little camera shy and hide until the cheese but they added a nice flavor to the pizza.




Meatball Pizza

Meatballs ~

1 pound extra lean ground beef
1 large egg
1/4 cup bread crumbs
2 tbsp milk
1/2 tsp oregano
1/2 tsp salt
1/4 tsp freshly ground pepper
1 clove garlic, grated

Mix all the ingredients together and shape into small meatballs.  Place on a non-stick baking sheet and bake for 25 minutes at 350°.



Pizza Dough ~

2/3 cup warm water
1 tbsp extra virgin olive oil
1/2 tsp sugar
1 pkg active dry yeast

Combine the above in a 2 cup glass measuring cup.  Let sit for 10 minutes.

In a small bowl, combine 1 3/4 cups flour and 1/2 tsp salt.  Pour in the yeast measure and stir with a wooden spoon.  Turn out onto a lightly dusted board and knead for 3 minutes.  Place a teaspoon of olive oil into the bowl and return the dough, turning to coat the oil on all sides.  Cover and allow to rise until doubled.  Punch down and knead again.  Cover and let rest for a half hour before taking out to use.  Spread out evenly on a pizza pan and pinch up the sides.

Pizza Sauce

1 - 6 oz can of tomato paste
1 - 8 oz can of tomato sauce
1 tsp oregano
1 tsp paprika
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp basil
1/2 tsp sea salt
1/2 tsp sugar
1/4 tsp freshly ground pepper
1/8 tsp crushed red pepper flakes

Put everything in a small saucepan and heat.  Super easy sauce.

Top the dough with pizza sauce (however much you like ~ I froze the remainder for the next pizza).  Top with peppers, mushrooms or whatever you like.  Spread 1 cup shredded cheddar cheese and 1 cup shredded Fontina cheese.  Spread out the mini meatballs.  Place in a 350° for 20-25 minutes.

Prosciutto & Grape Pizza

You know how sometimes you get a craving for a unique combination.  Well this happened to me on Monday night and I went with it.  I won't hesitate to make this again but only when red grapes are back.  The black grapes I bought had no sweetness to them at all and ended up as squirrel and bunny food. 





Prosciutto & Grape Pizza

Dough ~

1 tsp quick rising dry yeast
1/2 tsp sugar
1 3/4 cups warm water

Mix together and allow to sit for 10 minutes.


 In a medium bowl,  combine 2 cups flour and 1 1/2 tsp sea salt.  Slowly mix in water.  Mix together (using your hands works best) until it forms a ball.  Knead for a couple minutes on a lightly floured surface and return to the bowl and rub 1 tsp extra virgin olive oil on top.  Cover with a towel and let rest for about 45 minutes.

Spread out dough on a greased pizza pan.  Top with slices of Fontina cheese (I used about 12 oz).  Top with small pieces  (4 slices cut up) of sliced Prosciutto and 1/2 cup of sliced grapes.  Sprinkle 1/2 tsp oregano on top.  Bake for 20 minutes at 350°.

Grilled Pizza

The temperature climbed into the 90's and the wind and rain stayed away so it was time to grill.  And what better than to make one of America's favorites.  You can use a store bought dough if you'd like.  My toppings of choice this time was BBQ chicken and bacon.








Grilled Pizza

Dough -

1 tsp active dry yeast
1/2 tsp sugar
3/4 cup warm water

Mix sugar and yeast into the warm water and let sit for 10 minutes.

In a medium bowl,  combine 2 cups flour and 1 1/2 tsp sea salt.  Slowly mix in water.  Mix together (using your hands works best) until it forms a ball.  Knead for a couple minutes on a lightly floured surface and return to the bowl and rub 1 tsp extra virgin olive oil on top.  Cover with a towel and let rest for about 45 minutes.

My toppings were a cooked chicken breast that I cut into small cubes, 3 pieces cooked bacon, crumbled and 1/4 cup of your favorite BBQ sauce.  

After the dough has rested, stretch out into your pizza shape.  Lightly brush olive oil on both sides.  Place on a hot grill.  Turn after 2 minutes.  Watch closely so it doesn't burn.  After you turn it, work quickly and put on your toppings.  In my case, it was the chicken and bacon mixture.  I topped this with 1/2 cup grated Fontina and 1/2 cup grated Applewood Smoked Gouda cheeses.  Sprinkle on about 1/8 tsp of dried oregano.  Your pizza will be done when the cheese has melted.

Quattro Formaggi

Doesn't that just sound like it's going to be good?  Plus Quattro Formaggi is just fun to say.  It adds a touch of class to a four cheese pizza, although this pizza is good on it's own by any name.  I used the other dough that I had frozen from a few weeks ago and it worked out fantastic.

Pizza crust (makes 2) ~ recipe from Cook's Illustrated

2 cups flour
1/2 tsp yeast
1/2 tsp honey
1/2 tsp salt
3/4 cup warm water
1/4 cup canola oil

Place all of the ingredients, except for the canola oil, in a food processor with the chopping blade.  Pulse until mixed.  Switch to run and pour in canola oil and let the dough knead in the machine.  Remove dough and place on a lightly floured surface.  Knead for a couple minutes.  Cut in half (one half can be frozen for later use).  Let dough sit for about 20 minutes or so.  This will give you time to get the rest of your ingredients ready.  Roll out the dough and place on your pizza stone.

Cover dough with a light coating of garlic olive oil.

Top with the following ~

1/2 cup Apple smoked Provolone, shredded
1/2 cup Fontina, shredded
1/4 cup Parmesan, grated
8 oz fresh Mozzarella, torn into small pieces

Bake for 15 minutes at 400°.

Turkey, Brie & Cranberry Pizza

I have a feeling I'm going to be making turkey more often after this leftover meal.  A nice crisp crust topped with some Thanksgiving leftovers plus brie and seasonings.






Turkey, Brie & Cranberry Pizza

1 thin crust ~ recipe below
6 oz Brie, rind removed
1 1/2 cups turkey, cut into small pieces
1/2 cup cranberry sauce
1 1/2 cups mozzarella cheese
1/2 tsp red pepper flakes
1/2 tsp oregano

Roll out crust and place on a pizza stone.  Dot top of crust in this order ~
brie
turkey pieces
cranberry sauce
red pepper flakes
mozzarella cheese
oregano

Bake at 425° for 14 minutes.

Pizza Nachos

College game day and another crossover food combination.  I love pizza and I love nachos so what better than to combine the two.  I made a quick and somewhat zesty pizza sauce to dot on the chips.  The fun part is you can put whatever toppings you like on your chips.  I chose pepperoni, Canadian bacon, mushrooms and lots of cheese.









Pizza Nachos

Sauce ~

6 oz can tomato paste
6 oz warm water
1 clove garlic minced
1 tsp Italian Seasonings (crushed)
1/4 tsp freshly ground black pepper
1/8 tsp red pepper flakes
1 tbsp honey
2 tbsp Parmesan cheese

Put all the ingredients, except the Parmesan cheese, in a small saucepan.  Bring to a simmer and let cook for 20 minutes.  Remove from heat and stir in Parmesan cheese.

Place your favorite tortilla chips on an pan that you can put in the oven.  Dot pizza sauce on top of the chips and add on your favorite toppings.  Bake for 10 minutes at 400°.

Pizza Balls

Since it was cold and rainy yesterday, what better than to make something fun for dinner.  I even took a shortcut of using a frozen pizza dough instead of from scratch...well it was raining and my Kindle and sofa enticed me to relax and nap.  







Pizza Balls

1 loaf frozen bread dough, thawed and allowed to rise. 
pepperoni
fresh mozzarella cheese
oregano
1 tbsp butter
Parmesan cheese

Pizza sauce for dipping

When the dough has risen about 1/4 of the way, leave in the loaf shape but cut 8 equal slices to make it easy to divide out later.  When fully risen,  take apart pieces and roll out into about a 5" circle.  Place pepperoni and 1 tbsp of fresh mozzarella in the center.  Sprinkle each with a dash of oregano.  Bring the sides together and pinch dough together so it's completely sealed.  Place seam size down in a round baking dish ~ I used an 8" springform pan.  Allow to rise again until doubled.  Bake at 350° for 15 minutes.  Remove from oven and spread butter over buns and sprinkle more oregano and about a tbsp of freshly grated Parmesan on top.  Return to oven and bake for another 8 minutes.

Pizza Bites

I can't believe school is starting here this week.  Summer is flying by and football is about to go from pre-season to a countdown to the super bowl.  These pizza bites are an easy to make treat that won't keep you from the game for long.









Pizza Bites

1 box of Mini Fillo Shells
Pizza sauce ~ recipe below
Mini pepperoni
Mozzarella cheese
Oregano

Place cups in a baking dish (a pie pan works great).  Ladle in approximately 1/2 tsp of pizza sauce in each shell.  Top with 3 mini pepperoni.  Top with shredded mozzarella.  Sprinkle oregano on top.  Bake for 10 minutes at 350°.

Pizza Potato Bites

I really don't feel there's any wrong way to make a pizza.  Well maybe it would be bad to try to create one on slices of cake but any bread or vegetable base is fair game.







Pizza Potato Bites

4 red potatoes ~ choose a good size for your choice of toppings
pizza sauce ~ my recipe is below
pepperoni
mozzarella cheese


Pizza Sauce

1 - 6 oz tomato paste
6 oz water
3 tbsp Parmesan cheese
2 cloves garlic, minced
3 tbsp honey
1/4 tsp oregano
1/2 tsp Italian Seasonings
1/4 tsp freshly ground black pepper
1/8 tsp cayenne
1/8 tsp red pepper flakes
salt to taste

Mix together tomato paste and water in a medium sized pan.  Add in honey, garlic and spices and let simmer for 30 minutes, stirring occasionally.


Cook potatoes of medium heat until fork tender.  Allow to cool enough to slice.  Slice potatoes in 1/4" pieces.  Place on a foil lined pan sprayed with olive oil.  Bake at 350° for 20 minutes.  Flip over and bake for another 20 minutes.  Remove from oven and top with pizza sauce, a slice of pepperoni and mozzarella cheese.  Return to oven for 5 minutes.

Pizza Wontons

Pizza Wontons are a mix of two cultures.  Super easy to make especially if you cut up string cheese and use mini pepperoni like I did.  I did not use a premade pizza sauce for dipping as a shortcut because my recipe is a quick one, especially since I had some frozen from the last batch that I made.  I'll post the recipe again.






Pizza Wontons


25 wonton wrappers
5 string cheese 
mini pepperoni

Cut each piece of string cheese into 5 equal pieces.  Place one piece and 3 mini pepperoni in the center of the wonton wrapper.  Dip your finger in water (once for each of the 4 sides) and wet the edge of the wrapper.  Gently fold over into a triangle shape and press down on the edges.  Place on a greased baking sheet.  When all 35 are made, spray with cooking oil and bake for 10 minutes at 325°.  Serve warm.




Pizza sauce

1 garlic clove, minced
1/4 medium onion finely chopped
1 tbsp extra light virgin olive oil
1 6 oz tomato paste
1 15 oz tomatoes peeled, seeded and diced
4 oz water
1 tbsp Italian seasonings ~ crush between your hands and sprinkle into the sauce
1 tbsp honey
1/4 tsp pepper
1/4 tsp cayenne pepper
1/4 tsp red pepper flakes
salt to taste

Heat olive oil in sauce pan and add in garlic and onion and cook until tender.  Add in tomato paste and water.  Add in tomatoes and spices.  You can also mix in 1/4 cup of your favorite red wine.  Let cook for about a half hour for all the spices to blend into the sauce.

Tortilla Pizza

Spring fever has arrived.  It only took a dozen seed catalogs and a day of sunshine to have me cleaning, tossing, recycling and finally winding down to finish reading How I Learned To Cook by Kimberly Witherspoon and Peter Meehan.  I enjoyed it.  If you haven't picked it up, this book and Don't Try This At Home also by Kimberly Witherspoon are fun to read.  A quick glance at the clock sent me into the kitchen looking for something for dinner.  I chose this over peanut butter toast.  It was a good choice.






Tortilla Pizza

Flour tortillas
Pizza Sauce
Mozzarella Cheese
Pizza Toppings of your choice

Pizza Sauce ~

15 oz tomato sauce
4.5 oz tomato paste
2 cloves garlic, minced
1/4 cup onions, minced
1 tsp extra virgin olive oil
1 tbsp oregano
1 tsp basil
1 tsp honey

Heat a medium sized saucepan with the olive oil.  Add in minced onions and garlic and cook for 2 minutes before adding in remaining ingredients.  Remember to crush the oregano and basil in your hands before adding to the sauce so they release their oils.  Cook for 10 minutes over a medium low heat until the sauce thickens.

Place flour tortilla(s) on an ungreased baking sheet.  Top with about 2 tbsp pizza sauce and then your favorite toppings.  Bake at 400° for 15 minutes until tortilla is crisp.

BBQ Chicken Pizza

As the temperature was heading down and resting at 0, I decided it was time to attempt a BBQ chicken pizza.  Having a hot oven on a cold night never is a bad thing either.  I did enjoy it even though I was attempting more of a flat bread crust...I'll keep working on that.





BBQ Chicken Pizza


Crust ~

1 cup warm water
2 1/4 tsp active dry yeast
2 tbsp
2 tsp salt
3 cups flour


Combine warm water, yeast and sugar and let sit for 10 minutes.  Add in salt and extra virgin olive oil and stir into flour.  When well combined, cover and let sit for 15 minutes.


Pizza Toppings ~

2 chicken breasts, cooked and diced
1/2 cup BBQ sauce ~ make sure it's a good sauce
1 cup Cheddar Jack shredded cheese
1/4 cup Parmesan cheese
1/4 cup Mozzarella cheese
1/4 cup BBQ sauce
3 slices bacon, cooked and diced (optional)
1/4 cup red onion, diced (optional)

Stir 1/2 cup BBQ sauce into cooked chicken.  Get all your other ingredients ready to go as you preheat your oven and pizza stone to 400°.  When heated, spread out the dough and baste with 1/4 cup of BBQ sauce.  Add chicken and bacon, onions (if desired) and cover evenly with the three cheese.  Bake for 15 minutes.

Taco Pizza

Ever since my fail last week for not having a crunch factor to make this, today is the day.  It's a beautiful day - 41 degrees, the sun is shining and the snow melting.  







Taco Pizza


Crust ~

1 cup warm water
1 packet (2 1/4 tsp) yeast
1 tbsp sugar
1 tsp salt
3 tbsp extra virgin olive oil
2 1/2 cups flour
Combine warm water, yeast and sugar and let sit for 10 minutes.  Add in salt and extra virgin olive oil and stir into flour.  When well combined, cover and let sit for 15 minutes.

1st layer ~

1 cup refried beans (I used my recipe here that I've frozen in 1 cup containers ~ Crock pot refried beans )
1/4 cup of your favorite salsa
Mix together and set aside as you get the rest of the layers together.

2nd layer ~

1 can tomato paste
3/4 cup water
2 1/2 tbsp taco seasoning (Taco seasoning spice mix)
Mix in a small bowl.

3rd layer ~
1/2# ground beef, browned
1/2 tbsp taco seasoning - add in after beef is cooked

4th layer ~

1 cup Nacho cheese Doritos, crushed

5th layer ~
1 1/2 cup Mexican cheese 

Sprinkle 1 tbsp corn meal on a stone pizza baking dish.  Spread out dough and create a slight lip.  Spread fried bean/salsa mixture evenly on top of dough.  Top with ground beef and then the Doritos and cheese.  Bake at 350° for 20 minutes.  

Toppings to serve with your pizza ~

Lettuce
Diced fresh tomatoes
Sour Cream

Mexican Pizza

I realize that there is no such thing as an official Mexican pizza but I made a pizza using Mexican flavored toppings.  It's a rainy day and the cat dragged out all of his cat toys so I dragged out some of mine in the woman cave, namely the mixer with the dough hook.



Dough -

3 cups bread flour
2 1/4 tsp yeast
2 tbsp olive oil
2 tsp salt
1 1/4 cup warm water


Dissolve yeast in 1/4 cup warm water with 2 tbsp olive oil.  Let sit for 10 minutes until it foams.  In a large mixer bowl, combine flour and salt.  When the yeast his ready, gradually add into flour mixture while the mixer is on a medium speed.  Add in additional 1 cup water (watch the dough, you made need more or less than this amount. 

Turn out on a lightly floured surface and knead for 3 minutes.  Put back into the mixer bowl that has been coated with a light layer of olive oil.  Turn dough over so the ball is lightly coated, cover with a dish towel and allow to rise for 2 hours or until doubled.

When it has risen, cut in half.  I froze the 2nd ball.  Stretch out into oval form and pre-bake for 10 minutes at 325°.

Remove from oven and spread out refried beans.  Top with 1/2 pound of ground beef that is cooked with 1/4 cup of diced onions, salt, pepper and 1 tsp chili powder.  Drizzle 1/2 cup of your favorite salsa on top of ground beef and then top with 1 1/2 cups cheese (I used Monterey Jack).

Bake for another 10 minutes.
