Chocolate Zucchini Bread

Another manic Monday and a perfect time to bring chocolate into work to share.  I promised one co-worker that I'd put this recipe up so it must be ok.  







              


                          Chocolate Zucchini Bread

                        






  1 1/2 cups zucchini, shredded and drained
  1/4 cup canola oil
  6 ounces Greek yogurt
  1 1/2 cups flour
  1/2 tsp baking powder
  1/2 tsp baking soda
  1/2 tsp salt
  3/4 cup light brown sugar
  1/4 cup dark cocoa
  1/2 cup dark chocolate chips


In a large bowl, put drained zucchini, oil and Greek yogurt and mix well.
Add in dry ingredients.  Pour into a greased 4 x 9 bread pan.  Bake for one hour at 350°.

  1. I can't even begin to imagine how chocolate and zucchini taste together. I'm going to have to trust your co-worker on this one.

    1. You cannot taste the zucchini at all. It's just a moist chocolate bread.
