Apples and cinnamon is a wonderful aroma to have coming
from your oven on a cool Fall day. Soften your butter overnight and you’ll have
a great start to your day. I was extra happy that I got to use my acorn muffin
pan that I only drag out of the cupboard every Fall.
Applesauce Muffins
½ cup butter, softened
½ cup sugar
2 large eggs
2/3 cup applesauce (I used organic)
1 ½ cups flour
½ tsp salt
1 tsp cinnamon
1 tsp baking soda
Cream together the butter and sugar. Add in the eggs and
applesauce. Mix in the remaining ingredients. Bake at 350°
for 15 minutes (for mini muffins)
