Instant Pot Cheesy Ham & Potato Soup
There's a blizzard here up in the frozen tundra so it's the perfect time to make soup and bread. I decided to try making one of my favorite soups in the Instant Pot instead on the stove so I had more time to binge watch Grace and Frankie while making greeting cards.
Instant Pot Cheesy Ham & Potato Soup
2# potatoes, peeled and cubed (I used Yukon Gold)
4 cups chicken stock
1/4 tsp garlic powder
1 tsp sea salt
1/2 tsp freshly ground black pepper
2 tbsp celery flakes
Place all in your Instant Pot and set on soup setting (20 minutes). Release the steam and add in -
8 oz cheddar cheese
1 cup ham, diced
1 cup cream (heavy or whipping)
Allow the cheese to melt and ham and cream to heat up before serving.

Instant Pot Round Steak & Gravy
Happy New Year! I made this recipe to start off the year with a hearty meal so I can try to ignore the freezing rain coming down outside. I created a dredge for the meat and browned it in a frying pan instead of in the Instant Pot so I could brown more pieces at one time and make the gravy there before I put everything in to tenderize and create the thick gravy.
Instant Pot Round Steak & Gravy
1 1/2# round steak, cut into smaller pieces
Dredge ~
1/2 cup flour
1/4 tsp garlic powder
1/2 tsp salt
1/4 tsp freshly ground black pepper
1/4 tsp paprika
Heat a large frying pan with 2 tbsp olive oil. Dredge pieces of round steak and place in the hot frying pan. Brown on both sides and then place in Instant Pot pan. Add 2 cups hot water to drippings and whisk in the remainder of the flour mixture. Add in 1 tbsp beef Better Than Bouillion, 1/4 cup ketchup and season with salt and pepper to taste. When it starts to thicken, pour over the round steak. Set the Instant Pot to the Meat/Stew setting for 45 minutes. Allow for a natural release.
Serve over mashed potatoes.
